01 - Short and Sweet
The week leading up The Unconscious Shadow workshop was packed, and the workshop yesterday went great 💪
So today I’m treating myself to a lazy day of relaxing and filling up the chargers before playing catch up on life next week.
In that vein, I’ll just share this super-simple-yet-decadent citrusy dessert recipe that I’m going to devour today after lunch. And dinner:
Lemon Posset (fancy word for “citrus flavored thickened cream)
2 cups heavy cream
2/3 cup sugar
2 teaspoons finely grated lemon zest
5 tablespoons fresh-squeezed lemon juice
1 pinch salt
Mix heavy cream, sugar, and zest together, bring to boil, and cook for 5 more minutes boiling. Then whisk in the lime juice and salt. Cool for 15 minutes, pour into 4 ramekins or glasses and chill in the fridge until it’s cold and set.
